Try my mom’s Healthy Organic Albondigas Soup Recipe.
Do you ever get a nostalgic craving for something your mom used to make you when you were a child? One of my fondest memories was having my mom make me my favorite healthy organic albondigas soup. If you’ve never heard of Albonidgas Soup I’d suggest you try it! It’s the best in the whole wide world!! No seriously, it really is! My mom learned to make it from my grandmother who coincidentally lived to be 103 years old. So this stuff has to be good right? It’s a veggie and meatball soup with rice and mint. Yummmm…
I’ve helped my mom make this even healthier by using quinoa instead of rice and all organic ingredients. This is one of my most favorite childhood meals. My mom’s Healthy Organic Albondigas Soup! Happy Healthy Eating!
1 lb ground chicken or turkey (personally I prefer chicken)
2 cloves of garlic finely chopped
¼ cup Chile Moreno finely chopped
¼ cup brown rice (20 min. soak to soften) or 1/4 cup Quinoa
Fist full of fresh oregano
Fist full of Fresh mint leaves (finely chopped)
2 med sized tomato (chopped)
3 to 4 cups of water (depending on how much soup you want)
Hot water as needed
Dash of olive oil
Chopped organic veggies any combination of:
Carrots
Squash
Green beans
Chayote squash
Salt & pepper to taste
Directions:
In a pot with olive oil add chopped tomato, ½ garlic & 1/3 onion in low heat cover pot let simmer for about 5 mins until ingredients are soft and able to be mashed up with fork. Not too mushy leave them soft and chunky. There should be tomato juice in the pot. Add water to pot, cover and bring to a boil.
After soaking brown rice (quinoa) for about 20 mins remove all water and add to ground meat with ½ oregano, ½ mint, chile Moron, 1/3 onion, salt & pepper to taste. Blend all ingredients together.
Wet hands so meat mixture doesn’t stick to hands when making meat balls.
Add meat balls then hard veggies to boiling pot of water let boil for 15 mins. Add hot water as needed
Lastly add soft veggies, salt, pepper, remainder of onion, garlic, mint and oregano let boil for aprox 15 mins. or until all veggies are soft.
Turn off heat and let sit before serving until soup is at desired temperature. You don’t want to serve boiling water.
Add avocado and sprig of mint to garnish.
